Black Bean Spinach Quesadillas

Here is a recipe we prepare as a family constantly to get the health benefits of eating spinach and black beans. My kids request the quesadillas on a weekly basis and the apple banana spinach smoothie doubles as either a quick breakfast beverage or a tasty dessert to follow lunch or dinner.  Who knew eating black beans and spinach so frequently would be so enjoyable!

Black Bean Spinach Quesadillas
These are really great topped with your favorite salsa.

8 Whole Wheat Tortillas or roti
1 15 oz. can organic black beans
1 10 oz. can organic diced tomatoes
2 teaspoons ground cumin
2 tablespoons chopped cilantro
8 oz shredded cheddar cheese
Organic baby spinach leaves
Shredded lettuce
Your favorite salsa

Drain and rinse black beans. Combine black beans with diced tomatoes in a skillet. Stir in cilantro and cumin. Heat until warm.
Remove black bean mixture from skillet and add to bowl.
Rinse skillet or use another skillet and spray with oil. Heat skillet on medium heat.
Add one tortilla to the pan. Sprinkle on cheese, then add 2 large soup spoonfuls of the black bean mixture. Top with several spinach leaves. Then add on more cheese. Top with a tortilla. Use a spatula to flatten the quesadilla. Flip quesadilla to brown on both sides and until cheese melts.

Slice quesadilla using a pizza cutter into 8 slices.
Top with salsa, lettuce, and more cheese! Enjoy!

Makes 4 quesadillas (32 quesadilla triangles)
