I should never shop for groceries when I am hungry. I tend to buy items that I ordinarily wouldn't. But this weekend I shopped and saw this really healthy Artesan bread that had all the good ingredients like the flax seed and several other good grains. The only problem was, it did not taste like bread so the kids wouldn't eat. That's when I came up with this recipe for corn and peas bruschetta. It turned out really good, hope you like it as well.
Ingredients
Artesan bread - half loaf
Corn 1/4 cup
Peas 1/4 cup
Milk 1/2 cup
Maida or all purpose flour- 1 tbsp
Cumin seeds powder- 1/4 tsp
Black pepper powder- 1/4 tsp
Paprika or red chilli powder- 1/4 tsp
Grated Cheese - I like to use the pepper jack cheese
I used frozen corn and peas.
How to make
Mix the peas, corn and milk and bring it to a boil and cook until the corn is tender but not soft; for about 2-3 minutes. Reduce the heat and sprinkle the all purpose flour or maida. Stir continuously and don't let any lumps form. Once the mixture thickens to a semi solid consistency close the heat. Add salt cumin powder, black pepper powder, Paprika powder. Spread a spoonful on cut artesan bread, sprinkle cheese and put in oven at 350 for 5 minutes or until the cheese melts.
