Spicy Vegetable Frittata

FrittataIngredients:
- 6 eggs
- 1 cup fresh chopped spinach
- 1 cup thinly sliced carrots
- 6 small potatoes thinly sliced
- 2 big cloves of garlic finely chopped
- 2 tbsp olive oil
- 1 tsp red chilli flakes
- Salt to taste
- Cracked black pepper to taste
- 1/2 cup shredded Cheddar cheese

How To Make:
Beat the eggs in a bowl and add salt, black pepper and red chilli flakes. Keep the mix in a refrigerator until ready to use. Heat the olive oil in a shallow skillet on med/low heat and add the garlic. When the garlic starts browning lightly, add the potatoes and carrots. Sprinkle some salt and black pepper on top. Saute until the potatoes are slightly tender (but not mushy). Add the spinach, mix the veggies well and cook until spinach is wilted.Let the mix cool a little.



Preheat the oven to 400 F. Spray a baking dish with oil and pour in the veggie mix. Add the egg mix and bake it for 15 minutes. Then sprinkle the cheese on top and bake again for 10 minutes. Voila! Spicy Frittata is ready! Serve with bread for a filling meal.



Make It Healthful!

Instead of 6 whole eggs, use egg whites from 8 eggs and the yolks from only 3 eggs. Skip the potatoes if counting calories. If using potatoes, leave the skin on.
