1 onion, chopped
3 carrots, peeled and diced
1 tsp fresh ginger, minced or grated
1 tsp coriander powder
4 cups vegetable broth
dash salt and pepper, to taste
In a large pot, cook the onions about 3 to 5 minutes. Add carrots, ginger and coriander powder and cook, stirring for a few more minutes.
Add the vegetable broth and bring to a low simmer. Cover and cook for at least 25 minutes, or until carrots are very soft.
Transfer the soup to a blender or food processor and puree.
Add a dash of salt and pepper and serve hot.decorate with a spoon of fresh butter or fresh cream and coriander leaves.
