Cranberry Fluff

cranberry fluffIngredients:
- 1 lb Fresh Cranberries
- 2 cup sugar
- 1 orange
- 1 cup red grapes (halved)
- 1/2 cup chopped pecans
- 1 cup cool whip
- 1 cup miniature marshmallows
 
How To Make;
Coarsely grind cranberries and orange together. Add sugar and let set overnight in the refrigerator. Next morning, drain the cranberry mixture. Add chopped pecans and cut grapes, mix together and return to refrigerator. Just before serving, add cool whip and marshmallows and mix well. Goes well as a side dish on Thanksgiving menu.

Fresh Berry Sauce

Fresh Berry SauceIngredients:
- 1 cup fresh, halved raspberries
- 2 cups fresh, quartered strawberries
- 1/2 cup sugar
- 1 tsp fresh orange zest
 
How To Make:
Mix up the berries and orange zest. Start heating in a sauce pan on medium heat. When the berries become soft and mushy, add the sugar and let the mixture boil. Then turn theFresh Berry Sauce heat low and simmer for 5 more minutes. Turn off the heat and let it cool to room temperature. Store in the refrigerator in an air tight container. Enjoy it as a topping on cakes, ice creams, waffles and pancakes. Mix it up with a dash or fresh lemon juice, olive oil, salt and pepper to make a fresh salad dressing.

POTATO PAYASAM(KHEER)

Potato KheerIngredients

Potato peeled and grated ----1 cup
Sugar ------2 cups
Milk------1/2 litre
Ghee----2 tb.spn
cardamom powder---1 spoon
cashew, badam for garnishing
kesar colour a pinch

Boil potato in cooker. In a thick bottom pan add 1 tspn of ghee and saute cooked potato until slight brown .Then add milk to that. Let it boil. add sugar, allow it dissolve.add  kesar colour,cadamom powder and cashew ,badam add the remaining ghee. Serve hot or cold.

ASOKA HALWA

Asoka HalwaIngredients

Green gram dal----1cup
ghee---2 cups
wheat flour---- 1cup
sugar ---2 cups
almond, cashew, pistachio for decoration
cardamom powder---1 spoon.

           Wash the  dhal and  cook it with sufficient water till gentle and mash it. In a thick bottom pan put 2 tbs ghee and when it is warm, add  the wheat flour and roast till nice aroma comes . Add the mashed dhal, and mix nicely. Let it cook in a moderate flame.add sugar and stir well. add the remaining ghee slowly and gradually and stirring. it should leaves the sides of the pan, add cardamom powder, fried cashew and all the nuts mix well.remove from stove.Transfer to greased bowl. Serve hot.

Rava Mawa Coconut Laddoo

Rava Mawa coconut LaddooIngredients

1 cup rava

1 cup mava

1/2 cup dry dessicated coconut (or coconut milk powder)

1 1/2 cup confectionery sugar or powdered sugar

3 tbsp ghee

1/4 cup milk

1/2 tsp cardamom powder

dry nuts and raisins


How to make

In a thick bottomed pan add 2 tbsp ghee and roast the rava on medium heat until it turns light pink in color. Add the coconut and mix it well. Reduce the heat if necessary.

Reduce to low heat and add the mawa and mix well until there are no lumps of mawa. Add 1 tbsp ghee and continue to mix for about 5 minutes. If the heat is more, the mawa tends to stick and burn, so mix it under low heat.

Take the pan off the heat and add the sugar.

Warm up the milk and sprinkle 2 tbsp of milk and mix well.

Add the dry nuts and raisins and make laddoos with the mixture. Add a little milk if the mixture is too dry to make laddoos.
