
Ingredients
1 pound carrots, peeled and grated
1/4 gallon half and half
3 tablespoon ghee
1/2 cup sugar
2 fist full raisins
2 fist full mixture of nuts (almond slices, cashew, pistachios)
1 teaspoon cardamom powder
In a thick bottomed container or in a wok or kadai heat the ghee.
Add the carrots and mix them.
Add the half and half.
Cook until the liquid is reduced.
Add the sugar and the raisins and cook until the halwa is dry as desired.
Mix in the nuts and cardamom powder.
Enjoy warm halwa with vanilla ice cream.
Tip: Grate the carrots on a food processor
If half and half is not available substitute it with 100 gms cream and 100ml milk.
If peeled and sliced almonds are not available, soak the almonds and then peel, then slice.
Keep the nuts in the refrigerator to keep them fresh.
To the mixture of the nuts add a little ghee and microwave for 45 seconds.
Add powdered sugar for a quicker cook time.
